Does anyone have any information on what you feel your users are typing for this type of search when looking for local results in the big search engines rather than actual local search engines/directories? How much variance do you see by theme?

For my target, I am seeing 60 / 40 with the 60 being "service city".

Your best bet is to run adwords and see the real numbers.

Our data suggests that service + city is the predominate search.

This question comes up every now and then, and everytime it does, I hope people don't do too much with this information. The key to any seo or ppc strategy is keyword diversification and local "service" roots should be matched with geo-derivations (neighborhood, zip, city, county, state, region). There are dozens of highly viable major geo-keyword derivations per metro.

Regardless of the SEM strategy employed, all major city + business keyword phrase derivatoins should be utilized. Especially when mixing up anchor text, building content and pages, and building PPC creative.

I fully agree with Chicago, It's good advice and data from our PPC campaigns show that 'service place' is way ahead of 'place service'
