I've got around 50 verified incoming links to my site and I jumped from a Google PR of 0 (actually gray) to PR of 5. Yeah! Now, I'm unsure what to do next. Should I continue to exchange links with as many relevant sites as I can find, or only those relevant sites with PRs of 5 or higher. Thanks.

Both, give priority to the higher PR links.

I would concentrate or getting quality links that will generate traffic to your website. Over time your partnership traffic will be almost as heavy as search engine traffic if you get quality links.
For examples I have one link on a site that has over 100 links on it's "links" page, but my link is #2. From this particular source I get 40+ highly targeted hits a day, 7% of which converts to sales.

Do not ingnore any chance of exchange valuable links with other sites! Quality links(PR>5 at present) would bring higher page rank to your site. A quantity of links would lead extra visitors to your site.

Download the Google toolbar. Point your mouse over the green bar and it will tell you the PR for the page you are on. If the bar is grey, they have no PR.
