If a website is displaying my RSS feed in their content, does that count as a link to my site? (because the titles in my feed link back to the original article)

Short answer - yes.

However, a longer answer might be needed. Look at how they are displaying the links

- are the links raw without click through counters
- are they via javascript
- are they on a page blocked by robot indexing (can you find the page in the engines)?
