I am so new to search engine optimization I am almost embarrassed to ask a question. I am in the process of optimizing a non-profit site <snip> and have a question that I hope someone can answer. The site has an incoming link from <another .org>.

Is there anything that can be done to improve the quality of this incoming link?

You can ask the owner to remove the backlink if you feel it not good...or i am getting you wrong111

The use of keywords in the text used in the link pointing to your site can provide a benefit.

It could be argued that:
<a href="widgets.org">Check out Widgets.org for more information about widgets.</a>

would benefit your site more than an image link or a text link such as:
<a href="widgets.org">More info.</a>

Make sure the anchor contains words you are trying to rank for. Check out this forums library [webmasterworld.com] extensively. If you are new to SEO, I would suggest dedicating an hour or two a day to reading WebmasterWorld. You can learn everything you need at this site with enough dedication and desire to learn.
