The Logo Requirement for Structured Mark Up says The image must be 112x112px, at minimum

The AMP Logo Guideline says The logo should fit in a 60x600px rectangle, and either be exactly 60px high (preferred), or exactly 600px wide. For example, 450x45px would not be acceptable, even though it fits within the 600x60px rectangle.

So what should be followed.

Use both.
One is structured data for your organization. This is going to be used for the knowledge graph, etc. and belongs on your home page.

The second one is specifically for articles and belongs in the article pages.

There are other logos that can be declared as well, such as the one for Facebook Open Graph that has an entirely different size requirement of 1200x600.
