You can also test your creatives. Write 5 or 6 different ads and set them to run evenly (Google will run the one which preforms best by default, but you can set them to run evenly in your campaign settings). The creative which gives you the highest ROI is the one you should go with. You should probably run this kind of test for more than just a day.

How can you find out which ad provided the highest ROI? We've got conversion info, but not sure where to see (if at all) which specific ad performed the best. Any suggestions?

Tag each creative with a unique code in the default URL. Google reports on CTR and CPC differences which you may factor in to your calculations, then track sales (on your end) by unique code.

You may also opt out of "Show better ads more often" (which the original poster alluded to) - which will prevent Google from serving the ad with the highest CTR in order to distribute the ads evenly - allowing you to test CTR X conversion evenly across the same pool of impressions.
