I have my category list, sub-category list, and product list connected to Adwords via their API. I get many impressions from the category and sub-category keywords, but most of the product keywords aren't showing due to "Low search volume". I've read about the benefits of long-tail keywords like these product names are, but I'm having trouble with the low search volume issue. Does anyone have any advice for me in this situation?

So nobody is searching for these product names. Look at your top products or change strategy and go for categories.
