The reason for asking is that I have two sites, both in the same industry / service sector, the old site delivers 70% of the visitors to the new site by means of a prominant notice "Please visit the new site".
The old site achieves a CTR / CPM / Earnings double that of the new site.
The old site is hosted in the UK, the new site is hosted in Canada
Also, does the name servers of the site affect the geotargeting of AdSense?
Thats what I have found I moved my .com site from US to UK for that very reason.
Possibly, your new website has, for some reasons, a better ad targeting...

Yeah as far as I know server location has NO impact on this.
If I am in texas and I visit a site in the UK I can get ads targeted to visitors from Texas/US etc. If I visit a site in New Jersey, I can still get ads targeted to Texas/US etc.
If the server is in China and I visit it, I will still get Ads from Texas/US.
Not even sure why anyone would want ads targeted based on the server location. The relevancy factor to visitors would often be horrible.
Though AdSense may primarily target by the visitor's IP address (and thus location), it is fairly clear that G's search takes into account server location (and probably TLD) too, which may influence who gets to your site to see ads, etc.
For this reason I have my .org site hosted on mirrors in the US and UK to try to avoid any unhelpful bias in the search engines, and am looking to host a replica somewhere in Asia-Pacific too.

PS. AdSense/G may also take into account the visitor's preferred locale, eg en_US vs en_GB.
