If I am being targetted by an advertiser I will be quite proud!
It's common on my site to see 0 clicks and some earnings early in the day, but have clicks show up later while the earnings stay the same.
I think "day after" stats are about the only way you can tell. Then if you have 0 clicks and some earnings, it's probably safer to assume some CPM ads ran.

G took a look at my site, and fixed a configuration problem on their end (e.g. instead of showing the best ad -- CPM to show if and only if it beat out the CPC adverts -- it continually showed CPM even if it is lower paying than CPC adverts). After that, things improved.
Drop G a note (even AdsenseAdvisor who helped me) and ask them to take a look at why you suspect CPM ads are not bringing you better payouts.
