Is there any option within Google Adsense or Google Analytics to select a previous day and display by specific time when each click came through?
I'm trying to figure out when my peak click times are.

No, but if you have your Google Analytics tied to your AdSense you might be able to get an idea from that.
But bottom line, I for one believe that not all clicks are reported in real time (and in fact that some clicks may take longer to validate than others) so I am not sure even if you did get this information that it would be 100% correct.
