This is most likely a dumb question, but when I replace the remaining AdSense ads on my sites, should I remove Google Analytics also?

Depends if you want to continue having Google knowing more than you do, about where your traffic is coming from, what the volume of your traffic is etc..and what it is doing once it arrives..and maybe "adjusting" your traffic* ( *the part that arrives via Google ) because of what they know..

If your business depends on a website, it should have *some* kind of analytics. If you don't feel comfortable with Google, there are other options. But running a website without some kind of analytics is like trying to fly a plane with one eye closed. You might could do it, but I sure wouldn't recommend it.

And I wouldn't make the decision based on my disgust over AdSense (or even search performance), I would make the decision based on who will provide me best with what I need to know.
