How does one find ad networks that specialize in a certain niche (I'm looking for the humor niche) I tried googling it, but didn't come up with much, any other ideas?

Visit a lot of humor sites and see what ad networks they're using.

How can I tell which network they are using?

Typically ad and affiliate networks route links through their own sites so that they can be logged.

Often you can see the name of the network when you hover over a link, sometimes it is disguised in the link. The image source can show you the site that is hosting the image - often the network. Sometimes the only way is to click and then view headers.
