I doubt it.

I agree with netmeg, I'm not sure it has any effect on your AdSense ads. But it's a good idea to add them, as Google's search engine results often use my meta descriptions verbatim when they display results for my pages.

I've seen some things in the past that certainly made me think the tags were being at least considered in which ads were shown on the page.

I'm not sure how we'd know. if we are using Meta Tags properly.
The keyword and description tags should closely tied to the page content to begin, so separating out whether it was page content or Meta Tag content that was influencing the ads that show on a page should be pretty hard to do.

Seems like it would be pretty easy to game; if I stuck mesotheli-whatever (I can't spell it) meta keywords in the header on my, say, Thanksgiving turkey recipe page - that would look kind of awkward.

I'm pretty sure AdSense did use meta tags once upon a time, not sure if it still does.
If it does, the meta tags probably don't weigh too heavily but I once saw Spanish meta tags on an English page that appeared to trigger Spanish AdSense ads so who knows.
The keyword query bringing you to the page is a factor that weighs on the ads displayed so even if Adsense doesn't directly use the meta tags, if the search engine does, then your meta tags will indirectly influence AdSense by influencing the keywords being used to attract visitors.
