Does Adsense income increase over time? If so is this due to more potential advertisers choosing to display their ads on yours?

Nowadays, very tough
Circa 2003-2006, it was very easy to see a continued growth.
But Adsense introduced a lot of changes -- and will keep on introducing changes -- that could potentially decrease your CTR, CPM and revenues. Good if these changes result in an increase in your sites, but for many, revenues went spiraling down.
Once you've reached your "peak," keeping it at that level is hard in itself. You've got to constantly test what works, you've got to work on content, you've got to bring traffic that responds to the ads.
It can be done, but it is NOT EASY

I read just a few cases where webmasters increased their earnings, most of the cases, just as mine, mean lots of work just to keep the earnings at the same level, so far very hard to increase them

I've increased every year since 2005, except for 2009 which was slightly down. But it's not really apples and apples, because I've had different mixes of sites over that time. But the general trend has been positive.

But don't be complacent, look long enough and read those incoming emails and over the years a couple of tasty non -Adsense opportunities will come your way. Search those out because the inevitable day WILL occur to each of us when the big G pulls the carpet from under our feet.

I guess the economy is effecting CPM too, surely? Despite Google's continuous growth in the PPC market.

There is a way AdSense earnings increase over time.
Suppose you spend 1 hour developing a page, put AdSense on it and it earns $1 over the course of a week. You can say you earned $1 for your 1-hour of work.
Next week it earns another $1 yet you haven't put any additional work into that page. Now you have $2 for that 1-hour of work.
If that continues for 1 year, you now have $52 for that 1-hour of work.
Change the numbers however you want and the potential is fun. Beats working a job where you make $X 1 time for your 1-hour of work and never get paid for it again.

That's essentially what I try to do, farmboy. But mostly I don't chase earnings, I chase traffic. Cause if I can bring in the traffic, the money eventually shows up too.
