Noticed this on a premium publisher website. When I kept mouse on the adsense ad it was directing to [ads.xyzwebsite.com...] . Does adsense give the option to use custom tracking script? Also are click rates disclosed to premium publishers?

That's either an affiliate link or xyzwebsite.com was running their own tracking system. As long as the page goes where the ad says it does Google doesn't mind.
