Regarding "Allowed Sites"

I go to ADSENSE SETUP tab. In that tab, I click ALLOWED SITES. I then choose the ONLY ALLOW CERTAIN SITES TO SHOW ADS FOR MY ACCOUNT button. In that open box underneath, is it to my advantage / benefit to list all of the URL's of websites I own, which I have AdSense code pasted into?

Only if you plan on getting paid.

The advantage is that if someone else's site is using your adsense code, and google decides they're spammy, you won't (or at least shouldn't) get penalized by google.
Make sure you enter the sites without the www.
Also, after doing this, you may notice that there are unauthorized sites using your code - for me at least, it was only one or two a week, and they were all the google or yahoo cache so it wasnt a great loss.

Let me rephrase the initial question to this thread so we can avoid any mixed up questions. Is it absolutely, positively necessary to put all of the URLs you have adsense code inside, in that ALLOWED SITES box?

IF you use the "allowed sites" feature at all, then....

Yes.

Otherwise you won't get paid for clicks on the sites you do not list.
