A log file analyzer, within limits can tell you about site visitors but not ad clickers. Some of the technical data like browser model, size of screen, and state/country of origin, and even ISP can give you a general idea to make inferences about your site visitors.
Beyond that you would have to poll your user to find out who the average is (again, not ad clicker), that's what many people do to get a better idea.
Personally, demographics of people who click ads probably has more to do with the keywords they used to find your site, which implies their intent. That has more impact than who the ad clickers are personally.
So in that respect I think you're looking for information that is of little to no use. I suggest you read the AdSense library and catch up about what AdSense is and why people click on ads.

The paid for version of Statcounter is as good as anything I've found and does seem to actually show the real country of origin etc.
