How do Channels work?

and do they help?

So what exactly do they do and how do they help you?

I haven't seen anything in google that really helps me in explaining what they're for..unless i'm just been blind and thats actually a whole page or 3 devoted entirely to channels.

Channels are names for your ads. That's basically all they are. They allow you to track the performance of an individual ad block, or a set of ad blocks. You're limited to 200, although personally I could use about twice that number.

Channels are a big help when it comes to finding out which ad format, location, colors, etc, work best on your site, or which part of your site does better with AdSense.

I'm surprised that nobody mentioned URL channels. These allow you to define a channel as a page or whole directory. Then you can see how many clicks and how much revenue that page or directory has earned. Also, you can then create reports that aggregate various channels (say, many page on the same topic). I find this useful to see how a particular topic is doing on my site.
