I have read all terms and conditions from adsense, but i didn't find anything about to publish monthly traffic on my website in a banner in pages that don't have adsense code. Is this ok?

Probably ok as long as you get the number from some place other than your AdSense stats.
I think what you can't publish are your AdSense stats, except for actual total AdSense earnings.

And I'd think twice before publishing your stats anyway; where would the value be in doing that?

One advantage is that it shows advertisers that the website has the potential to deliver a certain number of impressions. For example, it would be a waste of time to deal with a website that can only deliver a few thousand banner ads per month.

I'm not convinced that justifies publishing stats. There's rarely a need to negotiate that publicly.
Assuming we're talking about more than just a 'hit counter'.

you are permitted to publish your site's stats such as traffic, page-views, etc..
The only Adsense information you are permitted to publish is total gross earnings.. So, you cannot publish Adsense impressions, CTR, eCPM, or anything else - ONLY total gross earnings..
