The amounts are all in US dollars. Then when the net+30 payment is made by Google it's converted to the local currency (in my case pounds) to pay into a bank account.
From what I gather if your site is totally Canadian - eg mailing address is there, bank account there etc that's the currency you will be paid in. However if you're running a Canadian site from America you'll get paid in US dollars. However this is just how I see it - email Google Adsense support for a definitive answer based on the specifics of your situation.
