Quick traffic gains by de-optimizing away from video terms?

- Being ranked 1-3 for terms that have video results on the SERP just don't generate the traffic they once did.
- Being ranked 1-3 for terms that do not, or have a different special feature, haven't fallen off as much (in my corner of the web, YMMV).

Minor changes to titles, heading and some text could easily shift the focus and intent of an article towards terms with no video results and, theoretically, improve rank for non-video terms.

Alternatively, the page could be optimized for video heavy terms and, eventually, linked to a video you create for those terms.

Is it time to add queries with videos above natural results to the list of content types? ie: Informational, transactional and "stuck behind video results that take up all the above the fold space" ?

That's the game. If you rely on Google for free traffic and it's not happing despite ranking in the top 5 you're ranking for the wrong top 5. Either become a video creator or find more traffic from different terms?

Complaining doesn't do much good and I've yet to see terms that have videos lose the video section. If only it wasn't so darned big with lots more videos ranked below the feature box but ahead of non-Youtube content.

Just contemplating and considering options...

Try to use other queries. The previous ones may not be relevant. How do you want to promote it? Through YouTube or on your personal website? If on your personal site, then there will be no profit from such a promotion since YouTube will outweigh it. If you promote on YouTube, then you need to look at competitors to understand which query encourage more (for example via vidIQ).
What do you mean by adding queries?
