Google has added HTTPS report to Google Search Console, to the Page Experience report, and will gradually be rolling this out over the next few months.
This report helps show how HTTPS pages are served in search, and also indicates issues preventing pages being serves as HTTPS.

Before they said HTTPS not evaluated they said error:page could not be verified for NEW pages. I spotted this a few days ago. I should have grabbed a bag of popcorn before digging into search console this week while they upgrade it.... except, 3 updates to deal with at the same time!

We having fun yet?!

edit: a thought - A page is published - Google crawls - Google indexes - Google reports page in search console - 2 days later HTTPS data is (properly) reported.... so https is not part of the initial indexing evaluation, I guess? I wonder how many of the signals matter on first eval/index.
