'Change of Address Tool' for Blog to E-Comm migration question

Hello, I just have a question regarding the Change of Address tool.

We had a separate blog domain (blog.com) for several years and migrated all of those posts over to our main e-commerce site (sales.com) utilizing 301 re-directs and have confirmed no errors in Search Console.

I believe the dust has settled in terms of Google crawling and interpreting the change but I have a few questions.

1. Should I now take the old domain (blog.com) in Search Console and use the 'Change of Address tool' to point to the e-commerce site (sales.com)? What types of errors or impacts should I keep an eye on?

2. In the old property (blog.com), should I remove the sitemap completely? [Currently (blog.com) has ~8,500 discovered links, all of which point to the e-commerce site (sales.com).]

Any help is appreciated I just want to make sure I'm following best practices and not missing anything here. Thank you for the help!
