Short-term fluctuations don't matter. Certainly you shouldn't check any ranking more often than once a day. Then you can use a 7-day moving average to smoothe it out.
Even better, look at a monthly chart. These show the long-term trend, which is what really counts.

^^^ Well agree that anything more often then a weekly average is just a waste of time and blood pressure.
Secondary, during the CoVid-19 <pandemic> the world is undergoing at the moment the serps will have even stranger results than usual.
Last thing desired to hear: be patient. This, too, will pass ... and take six months after THAT before real numbers and users actually return.

my ranking is continuously shuffling. When it will stabilize?
Under the current Google algo your rankings will not remain in a fixed position, this is G2020, a slightly, and possibly constantly, moving feast as you improve / modify pages, as your competitors improve / modify pages.
Some new pages seem to be indexed and ranked very quickly (within a couple of weeks) whereas others seemingly still taking 2-4 months.
IME there's nothing a standard site can do about this, obviously news sites do get special treatment and possibly new products from very large producers / manufacturers but the rest of us need to sit back and relax a bit more ... constantly champing at the bit will get you nowhere other than affect your well being / health.
It is important that your customers also know this!
