I've recently noticed that all the images from my website indexed in Google Image search results show in low-res when one clicks on thumbnail to see the preview. [prnt.sc...]
Does anyone have an idea of what the reason for this could be?

Is this on mobile or PC/laptop?
I see it all the time on mobile.

Don't you block image hot linking? or , is your server returning different images, when hot linked?

I see this effect on websites that use cloudfront. The complete image will load after a brief pause, but for those snatching copies such as image search, that happens after they grab the image so that's all they can show.

It appears on desktop and mobile search as well.

I see the same with my images. In fact my images are SVG's thus infinitely scalable, but appear in image search as PNG's and the quality is horrid.
Conclusion, strictly speaking Google is not Hot linking.

Actually it must be something else: [d3higte790sj35.cloudfront.net...] We do not block images hot linking as you can see (Cloudflare).

That is not Cloudflare, it is Cloudfront. As noted, I see this on many domains using Cloudfront. Look into their documentation.
