I have checked one page in Fetch as Google - GSC - fetching and rendering Google saw the page is full loaded without any error or without missing content.

But the same page i have checked in Google cached with latest date - text version only in cached page only header and footer is crawlable and Content part is not crawlable to google.

So, where is the issue and which tool i have to consider to understand the crawler behavior. Any suggestions...

Cached version is an old version, often just a day old but can be weeks old. Fetch will pull in the page as it is right now. So even if you check the cached page with the latest date you are still not comparing the same page. At best you are comparing yesterday's page version with today's version. To further complicate things if you have a mobile responsive website the page can be showing different things with different code at the same time.
