It is worth stressing over Google dropping over a thousand pages or so on their index? The index fluctuates, I understand that. But recently we've seen the index go from around 63k down to 62k. This shows in both WMT and by searching on google using the "site:" parameter.

Worth worrying about or just a natural fluctuation?

Natural fluctuation that I wouldn't worry about but I would monitor it. If this turns into a trend then I would move it up on the priority list but a 1% shrinkage in site: results is a low priority to me. There are probably much more impactful actions you can be focusing on for your company.

Agree with goodroi, there are three major alarams that can be set by looking at the "index status" on GSC.

1) your index tanked like its the black monday
2) your index shows way to inflated values
3) your index declines by ~1% MoM for several months

The third one is the hardest to fix and is most often associated with subdomains, language versions, user content, documentation pages JS issues and other non-straightforward types of pages your domain might have.
