In my experience. Google retries the server every couple of hours. If it's down for a long period, then it will be removed from the SERPS.

"Removed" as in you had to start from scratch? Or were you under the impression Google kept your information around for a while?

Google still has some of my pages cached that I removed two years ago so I suspect the data has some durability if not the SERPS.

In my experience checking external links (I check thousands every month) about 10% of any recent list of links is dead on the first pass, this slowly dwidles to 1% by the end of a week. I'm sure the Googlebot sees something very similar to this and compensates to avoid dropping good links.
