How to set up sub email adresses on Gmail

I was reading somewhere that we can set up email adresses like [e-mail]
The author said that this was a good way to track who send spam to us.
For example if you sign up at a service/website that you think it might send you spam,you first create a subdomain for your email adress and sign up with that.
But there was no explain how to do this and also how could we access these "sub emails".

Does anybody know?

there is no hierarchy of mailbox addresses as in domain names.
[e-mail] and [e-mail] are merely two mailboxes at example.com
there is not a [e-mail] that "owns" them.

You can use the plus sign and a word after your username:

[e-mail]

Ok,how do I do that,placing the + I mean.
Simply when sign up somewhere I give as my email:

[e-mail]?

And the mails will simply come at [e-mail]?

Did you mean to take googleapp for free mail host? So you can make [e-mail]?

Because as i can see at the top. its just ordinary email if you wanted [e-mail]
