Anyone tell me how I find out who is hosting a particular site as I want to serve a cease and desist letter on them as well as the registrant.

Ping the server to get it's IP address. Then do a whois on that IP on the site of e.g. Arin or Apnic.

netcraft.com will tell you everything you need to know. Bookmark them, they will come in handy frequently.
