So,

I have a very well trained dog. A 13 month old boxer/lab but I need to keep her learning to keep her occupied.

It took her 3 10min sesssions to 'roll over' - What else would be fun and easy?

"paw" / shake

I always like the trick where you put a treat on their nose, let them hold it there, and then they snap it off and catch it.

Hoe about 'closing the door'

My Belgian Shepherd used to come in from the kitchen leaving the door ajar - bl**dy nuisance in winter.

We trained him to close it on command, and he got a reward of a dog biscuit.

Sadly, he quickly learned that the best way to get another treat was to open the door again and then stand there waiting for the command to close it.

Think he was training me at that point, so we stopped the biscuits and downgraded to just 'making a fuss' of him. Fortunately that solved the problem.

Now if only I could train him to fetch me a beer form the fridge...

If you search for something that takes longer to learn, try this:
Train her to lay down and pread her legs 180° - flat on the floor. The only dog that can do this is the Norwegian Lundehund (the only dog breed with 6 toes btw).

But seriously - what about:

- standing on two feed (well, that's for beginners)
- sucking spaghettis
- catching frisbees (disc dog sport)
- let your cat ride on the dog's back
- using the toilet (there are cats that do this!)
- taking a egg with her teeth without crashing it

Let me know if you are successful with this, and I'd be interested in a pup;)
