I have several folders within my MS Outlook 2000 and I would like to
know if I can export all folders in one shot. Currently I must export
each folder individually and it is getting annoying?

You can just copy the whole database (.pst file)

What does the .pst file include?
Also, for recovering purposes, would I just copy that file in the same folder
and my messages would be there?

Yes, it includes everything. There is an option on the import menu to pick up a .pst file.

Last time I imported from another users .pst there was a slight problem with the location of the new contacts.

I fixed it by going into Tools->Options->Mail Setup->Data Files , removed it then added it again and it was fine.

<added>If you are scripting/scheduling the backup, OL needs to be closed to copy the.pst file</added>
