Should G allow us to set unit priority?

We have control which unit fills first..

Do you think Google should allow us to give each ad unit on one page a priority so that our preferred positions can be filled with priority ads first.

I would like to see this if possible so I can control where the ads appear when there is only a limited amount of ads.

Right, I've been thinking the same thing. I would like to designate a priority to one ad group over another.

I am assuming google assigns value via a "top-down" approach, but depending on how your html is laid out, top-down may not actually be how you want it to be assigned.
