1) Approximately what percent of visitors click on the ads?
2) How much do you get paid per ad (I know this will vary greatly based on the content, but more specifically what percent you get from each click maybe?
Any other things I should know about this?

First, welcome to webmaster world!
The Adsense TOS doesn't allow us to say what kind of money we get, or how much per click, or how what percentage of people click on the ads.
But generally, I'd say if you have space on your pages that's available and not making money for you now, adsense is likely to be a good bet.
How much you can earn is dependant on so many variables, site and page topic, ad location, etc. that there really is no way to give a reasonable estimate.

The amount I made over a few days equals the amount I made with a well know affiliate links provider over a few months.
Dig around webmasterworld and experiment to find the right formula for your site.
Experimentation is the rule with AdSense. What may work on one site doesn't work well on another.
Just apply and once you get approved put in the code and see what works and what doesn't.
I have no complaints so far at all with AdSense - it has done a wonderful job of brining some revenue in on content pages that otherwise had no income.
