Why be like all the others looking for "high paying keywords" by doing that you are creating stiff competition for yourself and will probably never succeed.
What do you know a lot about? what do you enjoy? you must know something about something, so create a site that you would be proud to tell or show others, people will bookmark it, traffic and links will come in naturally, you need to create something that will sustain growth and not depend on search engines only, 30% of my traffic is repeat, create it for your users.
Yes create pages around different keywords/phrases, using title, desc, H1, H2 etc, following all the guidelines will help in the long run.
So you have a topic already thats a good start, for example lets call it a green grocer store, on paper draw like a family tree, example
Home page - description of your store including links to all MAIN categories subfolders IE,
/carrots/
/potatoes/ how many different potatoes can you think of /potatoes/new-potatoes/ etc etc
/sprouts/ (yuk)
/turnips/
If you do it in subfolders you can keep adding deeper micro pages, it can only grow further, keep adding content as you need to beat the competition by providing better content covering more categories, a lot of people build a site and keep all pages in the root, very difficult to link to every page from the home page menu, plan it properly, will you need to run it all from a database, how big COULD it grow, if you are in the early stages of the site plan NOW.
My main site has been around since 1998 and if I knew then what I know now, I would have built it completely different. You sound like you are at the ealry stage so plan it right and you will be rewarded later, it wont happen overnight.
