Just because the check becomes void after six months doesn't mean that Google's obligation goes away. You would just have to ask Google to reissue the check. I'm not saying it would be an easy or short process, so your best bet is to deposit the check before the six months is up.
Am considering holding onto my Adsense checks until the exchange rates improve.
Instead of gambling, you could also do this:
Contact your local bank and open an account in US dollars, then cash your check and put the money on the dollar account. When exchange rates improve, you can transfer the money to your Euro account.
and in the mean time, the bank pays you interest ;-)
