Is there a way to influence the type of ad displayed?
to make them more diverse and appealing?

My site is a very small niche market (a specific type of antique glass) It is quite popular and I get decent traffic. However the ads that are displayed tend to be for modern glass, my visitors are not interested in them. Is there a way to influence the type of ad displayed to make them more diverse and appealing? And is this allowed. many thanks

Have you tried "section targeting"? This allows you to tell Mediabot to ignore some text, or emphasize other areas of text. Go to the AdSense site and search for it.
If that doesn't help, you may need to tweak your pages. Put in more of the right kind of words and remove any that seem to be triggering the wrong ads. And yes, that is allowed.

Also don't forget, sites aimed at small niche markets face the problem that there may not be as many advertisers for your topic.
