Basically, I'm in the process of setting up a small business and want to use the code to try out adwords to promote my product.
The problem I have is that the expiry date of the code is fast approaching.
My business will not be ready for a few months yet.
Is there anyway of swapping the voucher with google for one with a later expiry date?

The advice that buckworks provided is right on the money. I'd advise creating your account with some sort of 'placeholder' ad, then, when done with set-up, immediately pause the campaign (or the Ad Group) you've created.
You may leave it paused for as long as you like - no worries there.
You are really ahead of the game in a way. You can spend the next couple of months coming up to speed on AdWords, at your own pace, before you start in earnest. ;)
