Since reading that thread, what is the reasoning behind the recommendations?

Should you choose to exceed the recommendations. Eg Maximum recommended number of keywords per campaign, inclusive all adgruops: 2000

What effect would you have if you went over 2000 keywords?

Your campaign will get slower to handle. We do have campaigns with over 20k words and they do just fine.
