If I had a keyword <my keyword> in Broad match, phrase match and exact match versions, would broad match catch the plural version <my keywords> or would I need to add another keyword for plurals?

Yes it would.

From [adwords.google.com...]

Broad Match - ... <snip> ... Your ads will also automatically show for expanded matches, including plurals and relevant variations.

A word of caution on relying on broad match to catch plurals:

It works fine, but if the plural is an important one I would suggest writing an ad that uses the plural. Broad match will not highlight widget in your ad text if it matches against widgets.

I may also help the quality score (but then again, so might crossing your fingers).

Also don’t forget those occasional cases in which your potential customers might not know the "correct" spelling of the plural. Make sure you give them all the choices:

* william gibson short story
* william gibson short storys
* william gibson short stories
