Is there a way to pause an ad while running a new one?

I need to run a temporary add, but I don't want to lose CTR data

One of our clients has a fall sale about to start. They want me to create ads to promote this sale and run them on certain AdGroups. The problem is that if I delete the current ads I'll lose all the CTR, etc. data.

So is there a way to pause these ads and run a new one?

Not if they're in the same ad group--although I believe it's possible to do this using the Google API and custom programming. Otherwise, you could put the new ads in a separate ad group, with the same keywords as the existing one. Let it run a couple of days till the ads and keywords are established, then pause the original one. (The sale ads will alternate with the original ones until then, of course.)
