SpyderWeb, please take my post for what it's worth to you, given that I happily work at AdWords. But in my (fully informed) view, the Jumpstart team is interested in helping new advertisers to set up AdWords account that reflect the advertiser's objectives, limitations, and means. And they are entirely open to your input on this.
In fact, they count on it.
Jumpstart is primarily designed for those who don't want to actually create the account on their own, but who are prepared to assume the management of the account once created - as Jumpstart accounts are not managed by Google. So, whether you create the account yourself, or have it created - it'll still fall to you to manage the account, monitor your results, make any changes, and just generally work to make sure it is meeting your needs.
All that said, your post hints at the sort of sophistication that makes me think perhaps you'd be happier setting up your own account. Your mention of a ton of negative keywords, for example, puts you well ahead of a great many who use Jumpstart.
Either way, I wish you the best of success with AdWords, should you chose to try it.
