If you select show ads in all countries and select all languages.....Does the ADSENSE ads that are included on your pages translate into that countries language?

No, no automated translation. But as they will only appear for the keywords you specify, they will only appear if a person puts in a search phrase in the language (or languages) of your keywords and thus, presumably, speaks that language.
