Right,

I have the Google toolbar set to use Google.co.uk.

I type my main keyword into toolbar and we're nowhere (page 3)

I then go to GOOGLE.co.uk type the SAME SEARCH and we're no.5. Click pages from UK and we disappear!

I then go to check datacenters and we're nowhere on www1 no.7 on www2/www3 and 5 on .co.uk.

Then checking all others datacenters, bar -fi (which I understood to be one without over aggressive spam filters) we're nowhere.

Have I been out in the sun too much recently?

This bad for me (an seo) and surely this must be getting the maybe even the user? Low and behold

Sounds very strange, i am not sure how well this new "Select your Google destination" thing in the Toolbar works, my advise is just to look at google.com and google.co.uk everynow and then, and a tip is not to focus on a single keyword.
Also there is a lot of threads in the Google forum why your site may not show up under a UK only search, do a site search, or use your favourite search engine, and i am sure you will find information on it.
