Setting up su domains on a windows Server

I am new to being the Admin on my site setting up a dedicated server.

It came with my primary domain setup, but now I want to set up subdomains for my varied activities. I am a complete noob so I need step by step coaching on how to do this.

I have searched the site, read a bit, not sure I follow it all, so I have posted to gain more detail.

Any help would be greatly appreciated.
