New site listing, interesting (frustrating) pattern

I've noticed this on two new sites I've started recently, both fairly low key, original content, nothing spammy. No problems with any of the other sites I have listed over the years.

Day 1: Create site, start adding content - few articles a day. All nicely optimised without being OTT.
Day 2: Submit sitemap to Google, get a couple of inbound links from third party sites
Day 4: (4 ish) Site appears in Google, but only as the domain name, no pages spidered, no text extract / title
Day 5: Still 1 page only, but text extract & title now show in G; 'site:' search shows just the index page, 'site:domain keyword' also works.
Day 7: Drops back to Day 4 status again, and stays that way; site/keyword shows no results.

Wondered if anyone else experience(s¦d) the same?
