Google Sitemaps for a commerce site

Good strategy for listing items?

Lone time lurker, first time poster. ;)

I am managing an ecommerce site and am looking to submit a google sitemap. We recently changed some of our deeper urls and think that we may be able to get the new pages re-indexed more quickly than waiting for the spider.

However, I'm not exactly sure how we should list the pages for the sitemap. We have pages for every product available in our catalog, but they can be listed under various catalogs. Should we include every product page in the sitemap, or just the category pages and content pages we offer? Has anybody had any particular success or have any recommendations?
