How long for Google to spider an entire site of thousands of pages?

I'm sure this is answered somewhere on this forum, but I couldn't find it. Sorry for asking again....

I've just launched 2 ecommerce sites with thousands of products in each. Each product has its own page, so as a result both sites have thousands of potentials SERPs. Both sites have been crawled by Google every night a week or so after going live. So overall they have been subjected to a Google crawl for around 2 weeks.

One site has 143 SERPs while the other has 40. The formatting of the SERPs is exactly how I wanted it, but there just aren't enough results pages.

It was really quick getting to the above numbers, but now it just wont progress any further.

The page links are well created so that every page leads somewhere "spiderable", and I'm not using any long URL strings or JS to create links.

So what has happened to thousands of other pages that should have been listed?

I have a feeling you're gonna say, it's just a matter of waiting! So is it?
