I have a new dedicated server and I need to register my own DNS or get my domains on someone elses nameserver.
What is the easiest way forward?

Can't you simply register it using your domain name's online control panel? It might be the same process as switching nameservers but allows the creation of such as well.

I need to set up my own DNS or use someone elses. I know this sounds crazy but I assumed that my dedicated server would have access to the providers DNS but they want to charge for using their nameserver or get me to register my own DNS. I want to know if its easier to pay for the service or easier in the long term to register my own DNS.

Depending on who you registered thge domain with you may be able to do IP forwarding
