Is there a way to make a domain completely untraceable to a host or owner? I know it's possible to remove personal info from Who Is data, but is there a way someone could trace the IP back to see who is hosting the site, or what server the files reside on?

You wish. :)

When there's a will, there's a way.

What does that mean? I'm not doing anything illegal or unethical. I just have a site that I want to remain anonymous.

Sure, they can find out who is hosting the site, but what good is that going to do them?

They are only going to find out who you are if you DO break the law, and your ISP is served with a criminal or civil subpeona to reveal your identity.

Well, that's the way it is SUPPOSED to work. I suppose that some hosting companies might be more easily "social engineered" than others, and might give up your name if Seargent Joe Friday just makes a casual phone call.

You could ask your hosting company to delegate the reverse DNS to you. That way, looking up the IP address would not return the name of your host, but would resolve back to your domain. Anyone who knows what they are doing could still figure out where you are hosted, because they'd just have to ping a few adjacent addresses. Further, they could tell by looking at the next-to-last hop in a traceroute.
